We are delighted to announce you have received the 2008 New Zealand Beef and Lamb Hallmark of Excellence, which recognises quality in preparation and presentation of your main course beef and lamb dishes.
Your dish ‘Hawkes Bay lamb rack, slowly cooked and grilled with thyme and rosemary with a port sauce, a hint of coffee and honey-cured figs; was noted by assessors for the perfectly cooked and flavorsome lamb, tender and succulent. Excellent flavour combinations in the sauce, garnish and accompaniments contributed to a highly enjoyable meal. Well done.
The dish ‘Angus prime beef with fennel, red onion and cherry tomatoes, organic kumara fritter and o~ jus lie’ was also praised by assessors for the well trimmed and flavorsome beef, beautifully cooked and tender. They noted the execution of the accompaniments and crisp, classical presentation. Overall, two excellent dishes highly deserving of the Hallmark award.
